Tea pairing: SpinneysFOOD Peppermint Infusion
Prep time: 15 minutes
Serves: 2-4
Ingredients
1 lemon
135g SpinneysFOOD Small Ready-Cooked Prawns
¼ tsp SpinneysFOOD Fine Salt
2 small SpinneysFOOD Organic Cucumbers
50g cream cheese
6 slices SpinneysFOOD High Fibre White Bread
2 tsp SpinneysFOOD Fresh Dill
Process
1 Zest and juice the lemon.
2 Toss the prawns in the lemon juice and zest and season with the salt.
3 Using a peeler, peel the cucumbers into ribbons and set them aside.
4 Mix the cream cheese in a small bowl to soften it slightly and generously spread the cream cheese over each slice of bread.
5 Chop the dill and sprinkle over 3 of the slices and top with the prawns and cucumber ribbons.
6 Top with another slice of bread and cut off the crusts. Repeat this process with each sandwich.
7 Slice the sandwich into 3 fingers and place on a serving platter.
8 Serve alongside the SpinneysFOOD Peppermint Infusion tea.
