This week Helen is joined by Chef Hattem Matar, a self taught chef and the Arab world’s first pit master. He's a master of meats. This week he's cooking for us an Arabic favourite, Molokhiya. A minced leaf, turned into a stock and served with rice and a beautifully succulent chicken sourced from Spinneys.
